Cookies for breakfast you ask? With no refined sugar or flour? Heck yes! The perfect quick grab and go breakfast for when you need every possible last second of sleep. Now let’s get cooking!
WHAT WILL I NEED?
- 1 scoop protein powder
- 1 cup oats
- 1/4 cup whole flax seeds
- 1/3 cup sliced almonds
- 1/2 cup semi sweet mini chocolate chips (regular or vegan)
- 12 whole almonds
- 1 teaspoon vanilla
- 1/4 cup agave or honey
- 1/2 cup peanut butter (smooth or crunchy)
WHAT DO I DO?
Line a cookie sheet with parchment paper. Place the protein powder, oats, flax seeds, sliced almonds and chocolate chips in a bowl.
Add peanut butter, agave, and vanilla. Stir to mix (mixture will be thick and resemble cookie dough). Place in refrigerator one hour. Shape into 1 to 1.5 inch balls and than flatten into a cookie shape on parchment paper. Press one whole almond on top of each cookie.
Place in refrigerator for 2-4 hours. Can be frozen up to 3 weeks or stored in the refrigerator up to a week (if they last that long!).
