Its that time of year again!
The leaves are starting to turn colours and the air is getting a bit crisper. As the cooler weather sets in I start to crave warm comfort “stick to your ribs” recipes; especially at breakfast. With that being said, who has the time in the morning to slave over a hot stove (not me)? Say good morning to life changing protein pancakes.
These little gems can be made in advance, frozen and than popped in the toaster, zapped in the microwave or just thawed and eaten cold in a moments notice! Let’s get cooking:
WHAT WILL I NEED?
- 1/2 cup Egg whites
- 1/3 cup Oatmeal (regular or gluten free)
- 1/4 tsp Baking powder
- 1/2 cup cottage cheese
- 1/2 scoop protein powder (I use chocolate New Zealand whey but any kind will do)
- 2 tsp Real vanilla extract
- 2 tsp coconut oil (to grease the pan)
- Optional – 1/2 cup real chocolate chips or berries or nuts
WHAT DO I DO?
Place all ingredients in a blender except optional mix ins and pulse until blended (roughly 15-20 seconds or so depending on your blender).
Pour pancake batter in lightly oiled pan to form 4-5 inch rounds. Sprinkle pancakes with chocolate chips or berries if you are so inclined! Once the pancakes start to bubble flip and cook about 1-2 min.
Top with peanut butter, maple syrup, jelly or nothing at all for you purists! What do you like to eat for breakfast? What breakfast items do you wish were easier to make/healthier?
