The Naughty list and chocolate coconut cake truffles…..

Well it is official folks….I am on the naughty list…..LOL

I can’t STOP eating all the treats I am making!!  I am powerless to the scent of chocolate or the gooey yumminess of spinach and artichoke dip.   I know that it is better to give than receive BUT I am only human here!

I will share one of the most perfect foods out there folks…..SIGH…….Chocolate coconut cake truffles!  Sooooooo delicious and easy to make!

 INGREDIENTS:

  • 1 box cake mix
  • 3 eggs
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • 1 tub chocolate icing
  • 1 cup shredded sweetened coconut
  • 1 1/2 teaspoons coconut extract
  • 1 package semi sweet chocolate chips
  • 1 package white chocolate chips
  • assorted sugar sprinkles
  • Non stick cooking spray

DIRECTIONS:

Heat oven to 350°F. Spray two 9″ cake pans with non stick spray and set aside.  Also, line a baking sheet with parchment paper and set aside.

Make and bake cake mix as directed on box for 13×9-inch pan, using water, oil, coconut, coconut extract and eggs. Cool completely, about 1 hour.

Crumble cake into large bowl. Add frosting; mix well. Shape mixture into balls; place on cookie sheet. Freeze about 45 minutes or until firm. When firm, transfer to refrigerator.

In  microwavable bowl, microwave semi sweet chips uncovered on High 1 min; stir. Continue microwaving and stirring in 30-second intervals until melted and smooth.

Remove a few balls from refrigerator at a time. Using 2 forks, dip and roll 1 ball at a time in chocolate. Return to cookie sheet; immediately sprinkle with sugar sprinkles or coconut. Dip a total of 20 cake balls in chocolate coating.

Repeat melting instructions for white chocolate chips. Dip a total of 20 cake balls in white coating; immediately sprinkle with  sugar sprinkles.

Refrigerate all coated cake balls about 30 minutes or until set.
