I have to say the holidays are my favorite time of year. Something magical comes over people…
I have a saying for it…..”The attitude of gratitude” . Well most people, (some folk are just damn crusty year round….nothing we can do about it!)..lol. It’s the time of year to be thankful for what you have, spend quality time with family and close friends, (Who are all really part of your family anyway right???) and eat some AMAZING grub.
I feel that I am truly blessed to have such an AMAZING supportive family, great friends, I job I don’t despise (NO REALLY, I SWEAR!!), and my health. This holiday season let’s be thankful for all the things that we have, share with the less fortunate, and not dwell on the things that we don’t……I can guarantee you will realize that you have everything that you need ;0).
OK……ENOUGH OF THE MUSHY STUFF…….LET’S EAT!!!!!!!
- 1/2 cup frozen corn kernels
- 1/2 cup chopped green onion
- 1 egg
- 1/2 cup quick cook oats OR whole wheat bread crumbs
- 1 teaspoon granulated garlic
- 1 teaspoon tex mex seasoning
- 1 teaspoon jalepeno /cilantro seasoning (optional)
- 1.5 pounds ground chicken or turkey
- 6-8 pieces low sodium sliced bacon
- 1/4 cup bbq sauce
Preheat the oven to 350 degrees and line a baking sheet with parchment paper or tin foil.
Mix together the first 8 ingredients in a bowl, it should have the consistency of cookie dough.
Shape the meat mixture into 7 equally sized mini loaves…It will be sticky!
Wrap a slice of bacon around each loaf and brush with bbq sauce.
Place meatloaf in oven for 32 minutes – Take out after 20 minutes and brush with bbq sauce again and place back in oven again for another 12 min.
These little gems are amazing for portion control and freeze beautifully!
